One of the best things to have happened this year is the change to my nutrition. Not an overhaul but a gradual progression towards better and more wholesome foods. A big part of that has been the discovery of Deliciously Ella, a healthy food blog devoted to simple & wholesome foods. I won't get into Ella's story but I was certainly inspired by her decision to care for her health in a sustainable & delicious way. I've only recently gotten her book & immediately tried one of her most popular & super super easy recipes.

This recipe is so simple and modifiable that you'll want to do it all the time. It's a terrific snack & you can make a large batch for the entire week. How great is that! 

Ingredients

– 1 cup of medjool dates
– 3/4 of a cup of almonds
– 2 tablespoons of chia seeds
– 1 tablespoon of coconut oil
– 1 tablespoon of hemp seed (my addition)
– 1 tablespoon of raw cacao powder
Makes about 15-20 balls

Directions:

  1. Place almonds in food processor. Pulse until crush
  2. Pit the dates and add to food processor
  3. Add all other ingredients and blend until completely mixed & sticky
  4. Roll mix into balls
  5. Place in freezer for an hour, then store in fridge.
